Provence has seen only few changes over the last 15 years. And since the the restaurant came under the ownership of Executive Chef Baptist Knaven five years ago, you'll still find all of your classic favorites such as the beautiful Catch Meunière and Whole Fish baked in Rock Salt, as well as the Onion Soup and Lobster Bisque on the menu.
Chef Baptist came to the United States about 15 years ago and quickly earned his accolades at his successful Mediterranean restaurant "Café Zito” on the North Carolina coast until he made the decision to move to the Triangle and begin working at Provence. Working with Felix Roux, a Provence native, gave him the edge in classic French cuisine and that is what his menu is based on.
